Ingredients
Around 16 slices bacon, cut into strips
1 tbs. butter
1 large yellow onion finely chopped
1 1/2 c. sliced mushrooms
6 potatoes boiled
1 tbs. chopped parsley
2/3 c. heavy cream
1 c. grated Cheddar cheese
salt and pepper
Preparation
Fry bacon in a nonstick frying pan until cooked and beginning to brown. Remove from pan, pour off bacon fat, and add the butter.
Fry the onion and mushrooms until cooked and beginning to color.
Cut the potatoes into wedges and arrange with the fried bacon, mushrooms and onions in an oval, 1 qt. casserole.
Add the chopped parsley and season to taste with salt and pepper.
Pour cream over everything and cover with grated cheddar.
Bake in preheated oven, 350 degrees, for 20-30 minutes until crisp and golden on the top and hot. Serve with broiled tomatoes.
