Ingredients
1/2 pound sliced bacon, cut into 1/2 inch strips
1/2 cup chopped potatoes
2 tablespoons chopped green bell peppers
2 tablespoons chopped onions
3/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup shredded cheddar cheese
6 eggs
Preparation
Cook bacon over medium heat in large skillet until crisp; drain, reserving 3 tablespoons drippings. Place dripping back into skillet and cook potatoes with bacon, bell peppers, onion, salt & pepper over medium heat until lightly browned; stirring frequently. Sprinkle with cheese; mix well. Break eggs into skillet. Cook over low heat until eggs are set, stirring constantly.
