Ingredients
4 cups water
12 oz farro
2 t salt
1 lb tomatoes chopped
1/2 finely chopped sweet onion
1/4 c diced chives
1/4 c finely chopped parsley
1 large garlic clove smashed
2 T balsamic vinegar
1/4 c extra virgin olive oil
Fresh groung pepper
Preparation
Combine water, salt and farro. Bring to a boil over high heat and reduce to medium low. Cover saucepan and simmer for 15-20 minutes. Drain well. Add tomatoes, onions, chives, parsley and toss. Whisk together olive oil, vinegar, garlic, salt and pepper in a bowl. Add to salad and combine. Serve at room temp
