Ingredients

1/4 CUP BUTTER OR MARGARINE

1 1/2 THINLY SLICED ONIONS

2 TBS. FLOUR

4 CUPS OF MILK

1 TSP. SALT

1/2 TSP. PEPPER

1/4 TSP. PAPRIKA OPTIONAL

1 CUP GRATED AMERICAN CHEESE

SNIPPED PARSLEY FOR GARNISH

Preparation

PLACE BUTTER IN TOP PART OF DOUBLE BOILER.

ADD ONIONS AND COOK OVER LOW HEAT, STIRRING OCCASIONALLY, UNTIL ONIONS ARE TENDER BUT NOT BROWNED.

REMOVE FROM HEAT AND STIR IN FLOUR. SLOWLY STIR IN MILK, UNTIL MIXTURE IS SMOOTH. COOK OVER LOW HEAT,STIRRING CONSTANTLY, UNTIL MIXTURE IS THICKENED AND COMES TO A LIGHT BOIL.

PUT BOILING WATER IN BOTTOM PART OF DOUBLE BOILER. PUT TOP OF DOUBLE BOILER IN PLACE. ADD SALT, PEPPER AND CHEESE. COOK, STIRRING OCCASIONALLY, UNTIL CHEESE MELTS AND MIXTURE IS SMOOTH.

SERVE IN BOWLS TOPPED WITH SNIPPED PARSLEY OR CHIVES.
