Ingredients

1 ripe Avacado

1 ear of corn or 3/4 cup frozen.

1/2 cup ready made salsa( mild medium or hot - to your taste!)

1 ripe tomatoe seeded and chopped

1/2 sweet pepper chopped fine

1 green onion sliced fine( save 1/2 for garnish)

!/2 half tsp cumin

1/2 half tsp corriander

6 shrimp per bowl(I use fully cooked 31-40 for company and salade shrimp for just the family)add shrimp defrost juice to soup.

1 can of chicken or vegetable broth (may not need all or may need to augment with water)

Preparation

Add 3/4 of avocado to blender with 1/2 all other veggies pulse to blend really smooth add broth to get smooth soup like consistancy.Divide soup and remaining fresh veggies between 3 or 4 bowls , can add sour cream and mint with the green onions as the final decorative topping.!
