Ingredients
1/4 cup applesauce
1/2 cup brown sugar
1 egg white
1 cup flour
1/4 tsp. salt
1/2 tsp. baking soda
1/2 cup skim milk
1 tsp. vanilla
Preparation
Preheat to 400. Cream together applesauce and brown sugar with electric mixer. Separate the egg, throw away the egg yolk. Add egg white to sugar mixture, cream together. Add flour, salt, baking soda, skim milk, and vanilla to mixture. Stir with a spoon just until the dry ingredients become wet. The mixture will be lumpy. Place cupcake papers in muffin tin. Fill papers 2/3 full. Clean all spills on the tin. Bake for 10-15 minutes.
