Ingredients
1 lb fresh fava beans, shelled, blanched and skinned
4 oz fresh,young fiddlehead fern fronds
1 TBL chopped fresh lovage
1 TBL chopped fresh marjoram
1 TBL chopped fresh chives
2 TBL french extra virgin olive
oil, + more for drizzling
2 TBL toasted pine nuts
splash of dry sherry
sea salt and fresh ground black pepper to taste
Preparation
Heat 2 TBL olive oil in a medium fry pan and saute beans with a splash of sherry over low heat 7-10 minutes. Add fern fronds and saute 3-5 minutes. Toss with fresh herbs and pine nuts and plate. Drizzle with a scant bit more oil, season with salt and pepper. Serve warm.
