Ingredients

2# fava beans (1 cup shelled beans)

1# sugar snap peas

1/2 red onion, thinly sliced

1/4 cup olive oil

2 new potatoes, peeled and sliced very thin

1 Tbsp fresh tarragon leaves

1 Tbsp fresh marjoram

Preparation

Combine favas, sugar snaps, onions, olive oil and 1/4 cup hot water. Cook over med-high heat, stirring often until beans and peas are bright green and still crisp, 5-7 min. season with salt and pepper. Add potatoes and cook 5 min. Remove from heat and add herbs. Stir to mix and serve. Can double recipe.
