Ingredients
2 small or medium red potatoes, scrubbed and cubed
1 yellow or sweet onion, coarsely chopped
1/2 pound baby cut carrots or regular carrots, cut into bite-size pieces
1 bunch radishes (about 10), washed and with tops and roots trimmed; if large, cut into halves or quarters
if desired, another vegetable such as a zucchini, yellow squash, or small number of brussels sprouts, cut into bite-size pieces
1-2 tablespoons of olive oil, butter, or margarine
1-2 teaspoons of roasted potato seasoning (available in your grocer’s produce aisle) - bacon bits and chive flavor is our favorite
Preparation
Clean and cut vegetables into bite-size pieces. Place on 2 or 3 layers of aluminum foil; add oil and seasoning. Wrap tightly and place close to coals; cook for approximately 40 minutes, turning once or twice. Time will vary depending on the heat of your fire and how “done” you like your vegetables. Open packet carefully and serve with freshly ground sea salt and/or pepper to taste.
