Ingredients
12 slices thick-cut,cooked bacon, chopped and cooled
18+ oz fresh spinach leaves, washed and prepped
6+ large hard boiled eggs, diced
2/3 cup vegetable oil
1/3 cup red wine winegar
1 Tbsp. lemon juice
1 Tbsp. soy sauce
2 tsp. sugar
2 tsp. dry mustard
1 tsp. yellow curry powder
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
Preparation
Cook and prep first 3 ingredients and set aside.
In a jar (preferably), combine the rest of ingredients and shake well. (this can be done a day ahead, for better flavor).
When ready to serve, toss spinach in dressing, then top with bacon and chopped egg.
Tip - if bringing salad to another location, carefully remove yolks from whites, chop whites ahead of time, and hand-crumble yolks when serving salad.
