Ingredients
1 ½ cups safflower oil
2 cups raw sugar
4 eggs, beaten
2 ½ cups sifted whole wheat pastry flour
2 cups grated carrots
1 cup crushed pineapple, drained
1 cup chopped walnuts, pecans or macadamia nuts
2 tsp. Baking soda
2 tsp cinnamon
½ tsp salt
½ tsp nutmeg
½ cup shredded coconut (if you want)
Preparation
Mix all ingredients in order given, bake at 350 for 35 minutes in a 9x13 inch pan, longer if using an angel food cake pan.
Cream Cheese frosting: 1 Stick butter 8 oz. Cream cheese Confectioner’s sugar until the consistency is good. Add sour cream if you want it less sugary
