Ingredients
3 fennel bulbs
1 T chopped thyme
olive oil
4 oz gorgonzola cheese crumbled.
2 oz of grated parmesan cheese.
salt & pepper to taste
Preparation
- Thinly slice the fennel.
- Cook the fennel in boiling water for about 5 mins or until tender.
- Drain the fennel.
- Toss the fennel with thyme, salt & pepper and enough olive oil to coat. Add the crumbled cheese and gently stir.
- Sprinkle the top with the grated parmesan cheese.
- Put the fennel mixture in oven proof dish and bake in a 350 degree oven for about 30mins or until the cheese on top has browned.
