Ingredients

3 fennel bulbs

1 T chopped thyme

olive oil

4 oz gorgonzola cheese crumbled.

2 oz of grated parmesan cheese.

salt & pepper to taste

Preparation

  1. Thinly slice the fennel.
  2. Cook the fennel in boiling water for about 5 mins or until tender.
  3. Drain the fennel.
  4. Toss the fennel with thyme, salt & pepper and enough olive oil to coat. Add the crumbled cheese and gently stir.
  5. Sprinkle the top with the grated parmesan cheese.
  6. Put the fennel mixture in oven proof dish and bake in a 350 degree oven for about 30mins or until the cheese on top has browned.
