Ingredients

2-3 lb fryer (cut up)

5 Tbs olive oil

1/2 tsp poultry seasoning

1 tsp salt

pepper

1 large onion

3 Tbs butter

2 Tbs tomato sauce

2 cups walnuts (finely chopped)

3 1/2 cup water

1 tsp salt

1/2 tsp cinnamon

2 Tbs lemon juice

1 cup fresh pomegranate juice or 1/3 cup syrop

1 Tbs sugar

Preparation

Saute chicken with seasoning until light brown on all sides (or bake in a 350 oven fro 45 min. Put aside. Saute onions in 3 Tbs butter until golden brown. Add tomato sauce and saute for a few minutes. Add walnuts to the onions and saute over a medium heat for about 5 min. Stir constantly and be careful not to burn the walnuts. Add water, seasoning, lemon juice and pomegranate syrup. Cover and let cook on a low fire for about 35 min. Taste the sauce and if you find it a little sour, add sugar. Arrange the sauteed chicken in this sauce. Cover and let simmer for 20 - 25 min.
