Ingredients

1 fresh duck

1 can 8oz. apricots

4 cups orange juice

4 cups of water

8oz. clover honey

2 cups fresh cranberries

2 cup broken or crushed pecans

1 cup of shallots

salt and crushed red pepper

parsley.

Preparation

Place rinsed duck in large roasting pan in oven at 350 degrees, basting frequently with orange juice basting mixture, which has water, apricots, parsley,cranberries, shallots, salt and crushed red pepper in it.When duck is done, leg will disjoin easily.Remove duck from oven and drench it completely in the clover honey, pressing pecan pieces into the honey until duck is completely encrusted.Return duck to oven for 15 minutes or until it is bubbly and golden.Serve duck with juices over a bed of fluffy rice, garnish with fresh cranberries,pheasant feathers and parsley. Serve with lots of warm crusty artisan bread with a nice sweet potato honey/nut/butter.
