Ingredients

6 medium tomatoes

2 cukes, peeled and seeded

1 bunch parsley, washed and chopped

1 bunch scallions

1/2 cup olive oil

2 tablespoons fresh mint

2 teaspoons oregano

1/2 cup crumbled feta cheese

2 small pita breads (optional)

salt, pepper

Preparation

If using pitas, place them under the broiler for 30 seconds, till puffed. Cut into discs, then continue to broil till lightly browned. Break into pieces. Chop tomatoes and cucumbers into 1/2 inch pieces. Thinly slice the green tops of the scallions and add to tomatoes. Add olive oil, mint, oregano, and aslt/pepper to taste. Chill for 1 hour. Stir in toasted bread and feta 15 minutes before serving.
