Ingredients
1 1/2 pounds medium to large shrimp, cleaned and deveined
Juice of 1 lemon
1/2 cup olive oil
1 bunch spring onions, sliced thinly
2 cloves garlic, finely chopped
dash of crushed red pepper
3 tomatoes, chopped
1/2 cup water
2 tsps dried oregano
1 cup feta cheese, crumbled
1/4 cup ouzo liquor (black licorice flavour)
salt and pepper
1/2 cup fresh parsley, chopped
Preparation
Place the shrimp in a shallow dish and sprinkle with lemon juice and set aside.
Heat the olive oil over medium heat in a large skillet. Add the onions, garlic and crushed red pepper and heat until wilted. Add the tomatoes and water and simmer for 15 - 20 minutes.
Drain the shrimp and add to the skillet together with the oregano, feta, ouzo and pepper and cook for about 3 - 5 minutes till the shrimp turn pink.
Remove from heat and season with salt and additional pepper to taste and sprinkle with fresh parsley just before serving.
