Ingredients
1/2 c. sundried tomatoes in oil chopped
1/2 c. roasted red peppers roughly chopped
2 cloves garlic…………more
1 small onion minced
Pinch dried pepper flakes
2 tblsp. Prepared pesto
1/4 to 1/3 c. olive oil
1 chicken breast/grilled/sliced/or cook
Salt and pepper
Preparation
Cook onion and garlic in about 1/4 c. oil, then add tomatoes, peppers, pepper flakes and cook med low to colour the oil. Add chicken if not already in, pesto, s and p and cook a bit longer. Keep adding oil, stirring for some time and breaking up chicken if you have cooked in pan. Add extra oil if you like. Stir half the mixture into pasta in bowl, then add rest, top with boursin, herb and garlic And parm.
