Ingredients
1/3 cup butter or oil
1 lb. boneless chicken breasts cut into 2" x ¾" strips
3 tbsp all-purpose flour
3 cups milk
1 300 g. package mixed frozen vegetables (approx. 3 cups)
1 ½ tsp. Salt
½ tsp. pepper
¼ tsp. nutmeg
4 green onions, sliced
2 tbsp. Chopped fresh dill or parley
1 lb. fettucine or medium egg noodles (green or plain)
½ cup freshly grated parmesan
Preparation
- Heat ½ of the amound of butter or oil on a large saucepan or deep skillet. Add chicken pieces (you may have to do this in 2 batches). Brown lightly and remove chicken from pan.
- Add remaining butter to pan. Add flour. Cook, stirring, about 5min. Do not allow flour to brown.
- Whisk in milk. Bring to a boil. Re-add chicken. Add vegetables. Cook gently, stirring often, 10 min. until chicken pieces are cooked and vegetables are tender.
- Season with salt, pepper and nutmeg. Add green onions and dill or parley. Taste and adjust seasoning if necessary.
- meanwhile, cook fettucine in a large pot of boiling salted water. When tender drain well. Toss with sauce and parmesan cheese.
