Ingredients
4 1/2 cups fresh basil leaves
1 1/2 cups fresh mint leaves
3/4 chopped walnuts, toasted
6 TBS grated parmesan
3 TBS minced garlic
1 cup plus 2 TBS olive oil
1 1/2 pounds (about 700g) fettucini
1 1/2 pounds (about 700g)large deveined shrimp
Preparation
Grind basil, mint, nuts and parmesan and 1 1/2 TBS of garlic in processor, adding slowly 1 cup olive oil. Season pesto with salt and pepper.
Cook fettucini with salt and olive oil
Heat oil, add shrimp and remaining garlic, saute until shrimp is cooked (4 minutes).
Drain pasta, return to pot and mix with shrimp and pesto.
