Ingredients

2 cups frozen field peas, cooked, and drained

1 cup fresh or frozen corn kernels

1/2 large purple onion, finely chopped

1/2 red bell pepper, finely chopped

2 tablespoons chopped fresh cilantro

1/4 cup olive oil

1/4 cup fresh lime juice

1/4 teaspoon salt

Stir together all ingredients; chill 1 hour.
