1 Cup Corn

1/2 Red Onion diced

1 Red Pepper diced

1 Cup fresh cilantro, finely chopped

1 Lime Zested and juiced

Fish

6 Tilapia Filets

Other Goods

Sour Cream

2 tablespoons Cayenne Pepper

1 tablespoon ground black pepper

2 tablespoons salt

2 tablespoons olive oil

1 Package Mexican Queso Fresco (white cheese)

12 Corn Tortillias Wamred

Preparation

  1. Preheat Grill or grill pan to high heat

  2. In a medium bowl, mix together corn, red onion, red bell pepper and cilantro. Stir in lime juice and zest.

  3. In a small bowl combine cayenne pepper, black pepper and salt. Brush tilapia filet with olive oil, sprinkle with spice rub.

  4. Arrange filets on grill/grill pan and grill about 3 mins per side or until cooked through.

  5. Top tortillas with fish, sour cream, crumbled queso fresco and corn salsa.
