Ingredients

Salad:

2 cups fresh white corn, cut off cob

2 cups fresh yellow corn cut off cob

2 cups green beans, chopped the size of a piece of corn

1/2 cup red pepper chopped the size of a piece of corn

1/2 cup red onion. chopped small

2 tbs mixed herbs (oregano, sage, rosemary, thyme)

1 bag arugula

kosher salt and black pepper

Dressing:

1/2 cup mayonnaise

1/2 cup buttermilk

1 chopped shallot

4 cloves garlic (chopped)

1 Tbs. mixed herbs (oregano, sage, thyme)

2 dried pasilla chile peppers….soaked in warm water for 30 minutes and seeds removed.

Preparation

Make dressing by placing all ingredients in a blender and blening well. Mix all vegetables and herbs. Add dressing to taste and mix well. Place arugula on plates and season with kosher salt and black pepper.
