Ingredients

2 c fresh corn kernels

3/4 c water

14 oz can black beans, drained & rinsed

1/2 c chopped shallots

1/2 c chopped red pepper

1/4 c chopped fresh cilantro

1 small cucumber, chopped

2 garlic cloves, minced

2 T corn oil

2 T rice vinegar

1 T sunflower oil

1 T lime juice

1 t sweet red pepper flakes

1/4 t ginger

1/4 t salt

Preparation

Combine corn kernels and water in saucepan. Bring to boil; reduce heat. Simmer, covered, for 7-8 minutes or until tender; drain. Combine corn, beans, shallots, bell pepper, cilantro, cucumber and garlic in a bowl, mixing well.

Whisk remaining ingredients in a bowl. Add to corn mixture and mix well. Chill, covered, for 2 hours.
