Ingredients 2 Cups Fine Plain Fresh Breadcrumbs. (Trader Joe’s breadcrumbs preferred) ½ Cup Finely Grated Pecorino Romano or Parmesan Cheese. (Trader Joe’s mixed cheese preferred) 1/1/2 Teaspoons Salt. Freshly Ground Pepper. 1/1/2 Cup All-Purpose Flour. 5 Large Eggs, Beaten. 2 Large Eggplants, Sliced Into ¼-inch Thick Rounds. 1/3 Cups Extra Virgin Olive Oil. 1 Medium Onion, Diced. 4 Garlic Cloves, Thinly Sliced. 2 Cans (28 Ounces Each) Peeled Whole Tomatoes, Pureed In A Food Processor....
